The ingredients needed to prepare Mexican Rice:

  1. Take 1 cup of rice soaked.
  2. Prepare to taste of Salt.
  3. Prepare 1 tsp of kashmiri Red chilli powder.
  4. Get 2 tsp of Oregano.
  5. Get 1 cup of mix vegetable (Carrot capsicum, potato) chopped.
  6. Use 1/2 cup of Green Peas.
  7. Use 1 tsp of Cumin powder.
  8. You need 2 tsp of Garlic cloves finely chopped.
  9. Prepare 1 tbsp of Oil.
  10. You need 2 of Finely chopped onions.
  11. You need 4 of Tomato puree.
  12. Provide 1 tbsp of Schezwan chutney.
  13. Get 1 tsp of Black pepper powder.
  14. Use 1 tbsp of Butter.
  15. Get 2 cups of Water.
  16. Take 2 tsp of Coriander leaves for garnish.

Steps to make Mexican Rice:

  1. Firstly chop all the vegetables and puree the tomato.
  2. Next in a pan add oil,butter & garlic mix well next add onions cook till it becomes transculent next add cumin powder,black pepper, salt and add rice and mix well for 5 min make sure you dont break rice.
  3. Once rice get tossed with mixture well next add all veggies & green peas and mix well.
  4. Add tomato puree and mix well next add oregano,schezwan chutney & red chilli powder and mix it lastly add salt again if required and add water and mix well close the lid and cook for around 25 minutes till rice & veggies get cooked properly..
  5. After 25 minutes check it if it's done switch off the flame..
  6. Serve hot by garnish with coriander leaves..
